Even after roasting all the root veggies we had, I never know what to do with them all. We ate them for dinner and they were amazing. But there are only so many nights in a row you can eat root veggies over and over again, am I right? So I experimented on a little poached egg and root veggies this past weekend.
And it was majorly awesome. No instructions needed if you’ve already roasted your veggies. This was the perfect way to use leftovers. Delicious!
