Pea and Fennel Risotto (Vegetarian) with Saffron

Fall weather means transitioning from cold to warm foods. Soups, stews, chili’s…but one thing I’ve always wanted to make at home (since I love it when I eat out) is risotto. And for my first try, this was was pretty darn good. David and I almost ate the entire 4 servings (oops!), but I did save one serving to take a picture of. (Our house is dark=not good for food photos at night).
