Basil and Friends

Fresh herbs were all over the menu for the cookout this past weekend.

I used one of my favorite cookbooks to get some cookout ideas. My Roasted Tomatoes were inspired by Barefoot Contessa.

12 plum tomatoes, halved lengthwise (I used cherry tomatoes)
4 tablespoons good olive oil
1 ½ tablespoons balsamic vinegar
2 large garlic cloves, minced
2 teaspoons sugar (I didn’t use sugar)
1 ½ teaspoons kosher Salt
½ teaspoon freshly ground black pepper

**Add chopped basil because it’s awesome.

Preheat the oven to 450 degrees.

Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, salt, and pepper over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.

  1. Oh man those ‘maters were good! Y’all should definitely try out that recipe. Ina also had a chicken recipe that was really good as well. Thanks to all who came over!
